A Cozy February Recipe: Hearty Vegetable Soup

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 zucchini, chopped
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups low-sodium vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil (optional)
  • Salt and pepper to taste
  • Optional: 1 cup cooked beans or lentils for extra protein

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, cooking until softened (about 5 minutes).
  2. Stir in garlic and zucchini and cook another 2 minutes.
  3. Add tomatoes, broth, thyme, and basil. Bring to a boil, then reduce heat and simmer for 20–25 minutes, until vegetables are tender.
  4. Optional: Stir in cooked beans or lentils for added protein and warmth.
  5. Season with salt and pepper to taste, then serve with whole-grain bread or a side salad.
