Summer is the season for fresh flavors, colorful ingredients, and easy meals that don’t require heating up your whole kitchen. Whether you’re cooking for yourself or whipping something up to share with friends or neighbors, these healthy summer recipes are simple, satisfying, and perfect for the season.

1. Mediterranean Chickpea Salad

This no-cook dish is packed with protein and fresh veggies.

Ingredients:

  • 1 can chickpeas (rinsed and drained)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • 1/4 cup red onion (finely chopped)
  • Feta cheese, olives, parsley
  • Dressing: olive oil, lemon juice, salt & pepper

Instructions:

Mix everything in a large bowl and chill for 30 minutes before serving. Great on its own or served with pita chips!


2. Fruit & Yogurt Parfait

Perfect for breakfast, snacks, or even dessert.

Ingredients:

  • Greek yogurt
  • Fresh berries (strawberries, blueberries, raspberries)
  • Granola or crushed nuts
  • Drizzle of honey (optional)

Instructions:

Layer yogurt, fruit, and granola in a cup or small jar. Repeat layers and top with a drizzle of honey.


 3. Cucumber Mint Water

Stay hydrated with this refreshing infused water.

Ingredients:

  • 1 cucumber, thinly sliced
  • A handful of fresh mint leaves
  • Cold water and ice

Instructions:

Combine all ingredients in a large pitcher. Let sit for at least 30 minutes. It’s cool, crisp, and perfect for hot days on the patio.


4. Grilled Veggie Tacos

Taco night gets a healthy twist with summer produce.

Ingredients:

  • Bell peppers, zucchini, red onion (sliced)
  • Olive oil, lime juice, taco seasoning
  • Corn or flour tortillas
  • Optional: avocado, salsa, shredded lettuce

Instructions:

Toss veggies in olive oil and seasoning, then grill or sauté. Fill tortillas with veggies and your favorite toppings.
